Kedegree

I found a good recipe in a magazine recently and thought I'd share it. It is called Kedegree (tuna, rice and peas).


2 T butter
1 t curry
1 small onion, diced
2 C water
1 C brown or white rice
1 t salt
10 oz. frozen peas, thawed
1 can tuna in water, drained
french fried onions for topping
  1. Melt a couple of tablespoons of butter in a large sauce pan. Dice one small onion and add to the butter. Add a teaspoon of curry and stir. Cook over medium heat for 5 minutes or so.
  2. Add two cups water,and one cup brown rice and a teaspoon of salt. Bring to a boil. Continue a rolling boil for about 10 minutes until the rice is tender. Reduce heat, cover and simmer for another 10 minutes.
  3. Put about 1/2 a bag (the recipe calls for 10 oz.) of frozen peas in a strainer and run under warm water to thaw. When the rice is done simmering, add the peas. Drain water from the tuna and add to the rice and peas. Stir.
  4. Cover a paper plate with a thin layer of french fried onions and microwave for 30 seconds to crisp. Sprinkle over the rice, peas and tuna mixture.
Lunch leftovers. Yum!
