2 T butter
1 t curry
1 small onion, diced
2 C water
1 C brown or white rice
1 t salt
10 oz. frozen peas, thawed
1 can tuna in water, drained
french fried onions for topping
- Melt a couple of tablespoons of butter in a large sauce pan. Dice one small onion and add to the butter. Add a teaspoon of curry and stir. Cook over medium heat for 5 minutes or so.
- Add two cups water,and one cup brown rice and a teaspoon of salt. Bring to a boil. Continue a rolling boil for about 10 minutes until the rice is tender. Reduce heat, cover and simmer for another 10 minutes.
- Put about 1/2 a bag (the recipe calls for 10 oz.) of frozen peas in a strainer and run under warm water to thaw. When the rice is done simmering, add the peas. Drain water from the tuna and add to the rice and peas. Stir.
- Cover a paper plate with a thin layer of french fried onions and microwave for 30 seconds to crisp. Sprinkle over the rice, peas and tuna mixture.
